How to Steam Fresh Broccoli:
Place the broccoli in a microwave-safe bowl, cover with plastic wrap and microwave for 2 minutes. Let sit for another 2 minutes before removing the plastic wrap.
Alternately, you can place the broccoli in a steamer basket over boiling water, cover and steam until crisp-tender. Keep in mind the broccoli will cook more in the oven so you want it to still be crisp.
Cream cheese not only makes this casserole super creamy, it makes it nice and thick without adding any flour. For cheese I use a combination of mozzarella cheese, Parmesan cheese, and cheddar cheese so that there is lots of cheese flavor.
You could add diced cooked chicken in this casserole and then you would have a one dish meal.
Leftovers will keep refrigerated for 3 to 5 days.

Ingredients
- 6 cups chopped broccoli florets
- 2 tablespoons butter
- 8 ounces cream cheese, softened
- 1 cup unsweetened almond milk
- 1 cup shredded mozzarella cheese
- 2 tablespoons freshly grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup crushed pork rinds
Instructions

Preheat oven to 350 degrees and lightly grease a 9-inch square baking dish.

Place broccoli in a medium bowl and add about 2 tablespoons of water. Cover with plastic wrap and microwave for 2 minutes. Let sit another 2 minutes and then remove plastic wrap.
Broccoli should still be crisp. It will cook more in the oven. You just want it partially cooked at this point.

Drain broccoli and add to baking dish.

Melt butter over medium heat in a medium saucepan.

Add cream cheese and almond milk and stir until the cream cheese is melted.

Add mozzarella cheese, Parmesan cheese, garlic powder, salt and pepper. Stir until melted.

Pour sauce over broccoli. Sprinkle the cheddar and crushed pork rinds on top.

Bake for 20 minutes.
