Parmesan Roasted Cauliflower

Parmesan Roasted Cauliflower has a thick coating of Parmesan cheese that gets wonderfully browned and crispy when roasted. This is the most flavorful cauliflower I have ever tasted.

Makes a great side dish for pretty much any meal. Roasting cauliflower really brings out its flavor and the Parmesan cheese adds flavor and saltiness plus it gets wonderfully golden and crisp in the hot oven.

How To Make Parmesan Roasted Cauliflower:

Cut a large head of cauliflower into florets. If you can’t find a large head, use 1 1/2 medium heads. You’ll toss the cauliflower with 3 tablespoons of extra-virgin olive oil in a large bowl.

Then add a mixture of Parmesan cheese, cornstarch, thyme, salt and pepper and toss to coat well. Dump everything out on a greased baking sheet and spread the cauliflower out. Place any loose Parmesan mixture on top of the cauliflower.

Roast for 15 minutes, flip each piece over, and roast another 3 to 5 minutes.

Recipe Tips:

Use fresh Parmesan cheese and grate it with a microplane/rasp-style grater so that it very fine. It will stick to the cauliflower better this way.

The cornstarch helps dry out the Paremesan cheese and keeps it from sliding off the cauliflower.

Parmesan Roasted Cauliflower

Ingredients

  • 3 ounces Parmesan Cheese, grated (1 1/2 cups)
  • 2 tablespoons cornstarch
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large head of cauliflower, cut into 2 inch pieces
  • 3 tablespoons extra-virgin olive oil

Instructions

  1. Place oven rack in lowest position in oven. Preheat oven to 450 degrees.

    Spray a rimmed baking sheet with vegetable cooking spray.

  2. In a medium bowl, stir together Parmesan, cornstarch, thyme, salt and pepper.

  3. Toss cauliflower and oil together in large bowl.

    Add Parmesan mixture. Toss until well coated.

  4. Transfer mixture to prepared baking sheet. Use a rubber spatula to scrape out all the cheese mixture from the bowl onto the cauliflower.

    Spread cauliflower out evenly.

  5. Roast for 15 minutes. Remove from oven. Flip each piece over with a spatula and return to oven for 3 to 5 more minutes.

Recipe Notes

It's best to freshly grate Parmesan cheese for this recipe with a rasp-style grater.
