I use a combination of nonfat Greek yogurt and light mayonnaise for this recipe, using twice the amount of greek yogurt as mayonnaise. I love my mayonnaise and find straight up Greek yogurt adds too much tartness.
A combination of honey and apple cider vinegar adds plenty of sweet tart flavor. This easy coleslaw has lots of crunch. A mixture of green cabbage, red cabbage, and broccoli slaw is used for the base.
This recipe makes a large batch, about 8 servings so it is perfect for potlucks and picnics.
Tips for making Healthy Apple Coleslaw
- I like to use a sweet apple since there is already alot of tartness between the yogurt and the vinegar.
- You can shred or chop fresh cabbage or use bagged coleslaw mix.
- I like to julienne the apple, ie. cut it like thin matchsticks. But you could coarsely shred the apple instead.

Ingredients
- 1 cup nonfat Greek yogurt
- 1/2 cup light mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 6 cups shredded cabbage, I use a combo of green and red cabbage
- 1 (12-ounce) bag broccoli slaw
- 1 carrot shredded
- 2 green onions slices
- 1 apple, julienned
- 2 teaspoons lemon juice
Instructions

In a large bowl, mix together Greek yogurt, mayonnaise, vinegar, honey, pepper, and salt.

Add cabbage, broccoli slaw, carrots, and green onions and toss to coat.

Drizzle the apple with lemon juice. This is best done immediately after cutting the apple.
Add to bowl and mix in.
