Air Fryer Zucchini Chips are breaded with Panko crumbs and Parmesan cheese and cooked until perfectly crispy with just a minimal amount of oil.
A great way to use up surplus zucchini and make a yummy appetizer. Serve with marinara sauce or ranch dressing for dipping.
How To Make Air Fryer Zucchini Chips:
- Slice the zucchini fairly thin. I do somewhere between 1/4-inch and 1/2-inch in thickness.
- Combine the flour, salt, pepper, and Italian seasoning on a plate.
- Whisk together the eggs and water in a bowl.
- Combine the Panko crumbs and Parmesan cheese on a second plate.
- Coat each zucchini slice in the flour mixture, dip in egg mixture making sure to completely coat both sides, and then press both sides into the Panko crumb mixture.
- Preheat the air fryer to 400 degrees. Spray both sides of the zucchini chips with oil and spray the air fryer basket.
- Place in a single layer in the basket (you will need to cook in batches). Air fry for 8 minutes, flipping them over and spraying them with a little more oil halfway through.
Once you are done cooking all of them, you can place them back in the air fryer basket and reheat them for 2 minutes or so.
Recipe Tips:
Cooking times can vary between air fryers, so use the cooking time as an estimate and don’t be afraid to take a few peaks to see how they are progressing.
Leftovers can be kept in an airtight container in the refrigerator. Reheat in the air fryer for 2 to 3 minutes.

Ingredients
- 2 medium zucchini, cut into 1/4 to 1/2-inch thick circles
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon Italian seasoning
- 2 large eggs
- 1 cup Panko crumbs
- 3 tablespoons grated Parmesan cheese
- olive or vegetable oil
Instructions

On a plate, combine flour, salt, pepper, and Italian seasoning.

Whisk together eggs with 2 teaspoons of water in a bowl.

Combine Panko crumbs and Parmesan cheese on a plate.

Coat zucchini slices in flour, dip in egg, and then press them into the Panko crumb mixture.

Preheat air fryer to 400 degrees.

Spritz both sides of zucchini chips with oil. Spritz the air fryer basket with oil. Place them in the air fryer basket in a single layer. Fry them in 2 batches.

Air fry at 400 degrees for 8 minutes, flipping over halfway through. I also like to spritz them with a little more oil when I flip them.
