Air Fryer Coconut Shrimp are wonderfully crispy and sweet. Serve with a spicy pineapple dipping sauce for a healthy appetizer or light meal.

Shredded coconut and Panko crumbs combine to make a fantastically crispy and flavorful coating for these Air Fryer Coconut Shrimp.

They are easy to make too. First coat the shrimp in a simple batter made from flour, baking powder, salt, and water. Then coat them in a combination of Panko crumbs and shredded coconut. They only need about 8 minutes in the Air Fryer and they are perfectly golden and crispy.

I love using my XL Power Air Fryer. With an Air Fryer you can have the taste of deep fried foods with only a fraction of the calories and fat. It makes eating a healthy diet so much easier because you will not miss out on your favorite foods.

Tips for making Air Fryer Coconut Shrimp:

Use angel hair or thinly shredded sweetened coconut. It will stick to the shrimp better. If you can’t find it, buy regular sweetened shredded coconut and pulse it in the food processor until it is in smaller pieces.

Instead of using pineapple preserves for the dipping sauce, you can use apricot or peach preserves.
