Shredded coconut and Panko crumbs combine to make a fantastically crispy and flavorful coating for these Air Fryer Coconut Shrimp.
They are easy to make too. First coat the shrimp in a simple batter made from flour, baking powder, salt, and water. Then coat them in a combination of Panko crumbs and shredded coconut. They only need about 8 minutes in the Air Fryer and they are perfectly golden and crispy.

Tips for making Air Fryer Coconut Shrimp:
Use angel hair or thinly shredded sweetened coconut. It will stick to the shrimp better. If you can’t find it, buy regular sweetened shredded coconut and pulse it in the food processor until it is in smaller pieces.
Instead of using pineapple preserves for the dipping sauce, you can use apricot or peach preserves.

Air Fryer Coconut Shrimp
Ingredients
- 1/2 cup pineapple preserves
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 2/3 cup water
- 2 cups sweetened shredded coconut
- 1/2 cup Panko crumbs
- 1 pound medium or large shrimp, peeled and deveined
- oil for spraying
Instructions

Combine pineapple preserves, vinegar, and red pepper flakes in a small saucepan. Bring to a simmer. Keep warm.

Stir together flour, salt, baking powder, and water in a medium bowl. Let sit 15 minutes.

Combine Panko crumbs and coconut in a pie plate. Stir to mix.

Dip shrimp in batter and then press into coconut mixture. Spray both sides of shrimp with cooking spray.

Working in 2 batches, Air Fry shrimp at 400 for 8 minutes, flipping halfway through.

Serve shrimp with pineapple sauce
