Some foods cook better than others in an air fryer. Salmon patties are a really great food to cook in the air fryer.

- Hardly any fat is needed to get them crispy. Just a light spray with oil.
For binder, I use an egg and a little mayo and for filler, I use crushed Saltine crackers. I think they have more flavor than breadcrumbs. For a crispy coating, I use Panko crumbs, but you could also use crushed Saltines for the coating.
HOW TO SERVE SALMON PATTIES:
I love to serve them over mixed greens with a little tartar sauce. They also go great with Marinated Cucumber, Tomatoes, and Onion Salad and Corn and Zucchini Saute.
RECIPE TIPS:
You can use tuna instead of salmon.
Canned salmon comes with pieces of skin and bone in it. It looks a little unappealing, but there is no need to remove them. They both contain lots of good nutrition. The bones are so small and have been so cooked down that they will crumble when you mix the salmon patty mixture and you will not detect them at all.
To prevent the patties from falling apart in the air fryer, shape the patties and refrigerate them for 1 hour before air frying them. If pressed for time, stick them in the freezer for 15 to 20 minutes.

Ingredients
- 1 (14-ounce) can pink salmon, drained
- 1 large egg, lightly beaten
- 2 tablespoons mayonnaise
- 5 crushed Saltine crackers
- 1/4 cup sliced green onion
- 1 teaspoon Old Bay or Cajun seasoning
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon lemon zest
- 1 cup Panko crumbs
Instructions

Combine salmon, egg, mayonnaise, crushed Saltines, onion, Old Bay, parsley, and lemon zest in a medium bowl.

Mix well and shape into 4 patties.

Press both sides into panko crumbs.Â

Place on a plate and cover with plastic wrap.
Refrigerate for 1 hour.

Preheat air fryer to 380 degrees.

Mist with oil. Air Fry for 4 minutes at 380 degrees. Flip over and mist with oil. Air fry 4 more minutes.
