Fresh Corn and Zucchini Saute is a simple and delicious summer side highlighting two of the seasons most delicious vegetables. Just a few basic ingredients are needed to make this recipe. The corn and zucchini are cooked in a browned butter and this is the key to the flavor. Nothing is more delicious than browned butter.
For me, summer is the easiest season to eat healthy and really load up on fresh vegetables. I love summer zucchini and corn and could eat them everyday.
Besides the butter, corn, and zucchini, the only other ingredients are salt, pepper, onion, and a few red pepper flakes if you want to add a little spice.
This Corn and Zucchini Saute is very easy to make. Just be careful not to burn the butter. It makes a great low carb and gluten free side for chicken, steak, pork, or even grilled fish.
If desired add a little Parmesan cheese or crumbled feta cheese just before serving for another flavor dimension. Or try adding some fresh herbs. Both basil and thyme really work with this healthy side dish.
In a pinch, you could use frozen corn.

Ingredients
- 1/4 cup butter
- 1/2 sweet onion diced
- 2 medium zucchini diced
- 4 ears corn kernels cut off
- salt and pepper
- 1/4 teaspoon crushed red pepper flakes optional
Instructions

Heat butter over medium heat in a large skillet. Cook for 1 to 2 minutes, stirring occasionally. You want it to get lightly browned.

Ann onion and zucchini. Cook for 2 minutes.

Add corn kernels and cook for 6 to 8 minutes or until corn is cooked to your liking.

Season to taste with salt and pepper. Add red pepper flakes if using.
