Healthy Crock Pot BBQ Pulled Chicken

Healthy Crock Pot BBQ Pulled Chicken has plenty of sweet heat flavor. Serve on top of a baked sweet potato or on a bun with some Skinny Coleslaw for a deliciously healthy make-ahead meal.

After 4 to 5 hours in the slow cooker, the chicken is perfectly tender and moist. Shred it well so that it gets completely coated in the sweet, tangy, and spicy sauce.

The sauce for this Healthy Crock Pot BBQ Pulled Chicken is made from scratch with no added sugar. The sweetness comes from just 2 tablespoons of honey and some balsamic vinegar.

The slow cooker does all the work for you. Just layer a sliced onion in the bottom of your crock pot. The onions will add wonderful flavor to this dish.

Crock Pot Healthy BBQ Pulled Chicken

Sprinkle the chicken breasts with salt, pepper, garlic powder, and smoked paprika. The paprika will add a wonderful smokiness.

Whisk together a 15-ounce can of tomato sauce, 1/4 cup of tomato paste, 1/4 cup balsamic vinegar, 2 tablespoons of honey, 2 minced garlic cloves, and some crushed red pepper flakes.. Pour on top of the chicken. Cover and cook on LOW for 4 to 5 hours. Shred the chicken and you’re ready to plate up this delicously tangy Healthy Crock Pot BBQ Pulled Chicken.

Can I use boneless, skinless chicken thighs instead?

Yes! Chicken thighs have a little more fat than chicken breasts but they will cook up juicier and with more flavor. Whole chicken breasts will take 4 to 5 hours to cook on LOW. Chicken thighs will take 5 to 6 hours.

Ingredients

  • 1 medium yellow or sweet onion, thinly sliced
  • 2.5 pounds boneless, skinless chicken breasts, about 4
  • 3/4 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can tomato sauce
  • 1/4 cup tomato paste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. Place sliced onion in bottom of a 6-quart crock pot.

  2. Combine salt, garlic powder, smoked paprika, and pepper and sprinkle on chicken.

  3. Place chicken on top of onion.

  4. Whisk remaining ingredients together and pour on top of chicken. Cover and cook on LOW for 4 to 5 hours.
