Quick and Easy To Make

A package of broccoli slaw makes this recipe quick and easy to make. What is broccoli slaw? Broccoli slaw is shredded broccoli spears and it is so tasty and healthy. It can be used instead of cabbage to make coleslaw. Find it in the grocery store with the bagged salads.

Creamy Texture

Use either mayonnaise or Greek yogurt for the creamy texture. Choose Greek yogurt if you want a tangier flavor.

How To Make Cucumber Broccoli Slaw Salad

  • Stir together the mayonnaise or Greek yougurt, apple cider vinegar, garlic powder, salt, pepper, and crushed red pepper flakes in a bowl.
  • Stir in broccoli slaw, sliced cucumber, and red onion.
  • Sprinkle the dill on top. Refrigerate for 1 hour.

Variations

  • Sunflower seeds and craisins are great additions.
  • Sliced radishes can be used instead of or in addition to cucumbers.
  • For more flavor, add some crumbled feta cheese.

Make Ahead and Storage

It’s best to make this salad an hour in advance so it has time to chill and the flavors can mingle. It’s also best to eat it within 12 hours of making it. It will get soggy with time.

Ingredients

  • 2/3 cup mayonnaise
  • 1 1/2 tablespoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of crushed red pepper flakes
  • 12 ounces broccoli slaw
  • 1 medium cucumber, thinly sliced
  • 1/3 cup finely diced red onion
  • 1 tablespoon chopped fresh dill

Instructions

  1. In a large bowl, stir together the mayonnaise, vinegar, garlic powder, salt and pepper.

  2. Add broccoli slaw, cucumber, and red onion. Toss to coat.

  3. Sprinkle with chopped fresh dill. Cover and refrigerate for at least 1 hour.
