Substitutes
You can easily make substitutions to this recipe based on what you have on hand.
- Bacon or sausage can be substituted for ham
- Bell pepper or broccoli can be used instead of zucchini.
- Monterey Jack or mozzarella can be used instead of Swiss cheese.
- Use Colby Jack to replace both the cheddar and swiss.

I love to serve this crustless quiche with either fresh fruit or a garden salad with balsamic dressing.

Ingredients
- 1 tablespoon butter
- 1/2 medium onion, diced
- 1/2 cup diced zucchini
- 5 large eggs
- 1 cup half-and-half
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups diced ham
- 1 cup shredded cheddar cheese
- 1 cups shredded swiss cheese
Instructions

Preheat oven to 375 degrees and spray a deep dish pie pan with cooking spray.

Melt butter over medium-high heat in a nonstick skillet.
Add onion and zucchini and cook until soft and golden. Add ham and cook 1 minute. Remove from heat.

In a large bowl, whisk together eggs, half-and-half, salt and pepper.

Stir onion mixture, cheddar cheese, and swiss cheese into egg mixture.
Pour into prepared pie pan.

Bake for 30 to 35 minutes or until set.
