Crustless Ham and Cheese Quiche makes a fantastic low carb and gluten-free breakfast, brunch, or lunch. Loaded with diced ham, zucchini, and two kinds of cheese, it is so packed with flavor you will never miss the crust.

This crustless quiche is so wonderfully rich and cheesy.

Ditch The Crust

Without the crust, a quiche becomes an easy low carb recipe. Not using a crust cuts down on carbs and time needed to make the quiche. This recipe can be prepped in just about 10 minutes and then it needs approximately 30 minutes in the oven.

Substitutes

You can easily make substitutions to this recipe based on what you have on hand.

  • Bacon or sausage can be substituted for ham
  • Bell pepper or broccoli can be used instead of zucchini.
  • Monterey Jack or mozzarella can be used instead of Swiss cheese.
  • Use Colby Jack to replace both the cheddar and swiss.

How To Serve Crustless Quiche

I love to serve this crustless quiche with either fresh fruit or a garden salad with balsamic dressing.

Let Cool Before Slicing

Once the quiche has been baked, let it cool 10 minutes before slicing. It can be eaten warm, at room temperature, or cold.

How To Store Crustless Ham and Cheese Quiche

Leftovers will keep for 3 to 4 days in an airtight container in the refrigerator and can be reheated in the microwave.

Crustless Ham and Cheese Quiche

Ingredients

  • 1 tablespoon butter
  • 1/2 medium onion, diced
  • 1/2 cup diced zucchini
  • 5 large eggs
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups diced ham
  • 1 cup shredded cheddar cheese
  • 1 cups shredded swiss cheese

Instructions

  1. Preheat oven to 375 degrees and spray a deep dish pie pan with cooking spray.

  2. Melt butter over medium-high heat in a nonstick skillet.

    Add onion and zucchini and cook until soft and golden. Add ham and cook 1 minute. Remove from heat.

  3. In a large bowl, whisk together eggs, half-and-half, salt and pepper.

  4. Stir onion mixture, cheddar cheese, and swiss cheese into egg mixture.

    Pour into prepared pie pan.

  5. Bake for 30 to 35 minutes or until set.
