Air Fryer Bacon, Egg & Cheese Biscuit Bombs- buttery biscuits are stuffed with scrambled eggs, bacon, cheddar cheese and air fried until golden. Makes a great breakfast on the go.
Only take about 12 minutes to air fry. For ease and convenience, this recipe uses refrigerated biscuits. I use either Pillsbury Homestyle Biscuits or Flaky Layers. They both work well.
HOW TO MAKE AIR FRYER BACON EGG & CHEESE BISCUIT BOMBS:
- The first step is cooking the bacon and eggs. You want to fully cook the bacon until it is crispy. The eggs you should undercook some. They will cook a little more in the air fryer and no one wants dry, rubbery, overcooked eggs. Let the bacon and eggs cool some before stuffing the biscuits.
- Peel each biscuit open, leaving one side attached. Stuff as much bacon, egg, and cheese into each one as you can.
- Seal the edges really well. The seam will want to pull apart as the biscuit expands so be sure to really get the edges pinched together well.
- Brush with egg wash.
- Place a piece of parchment paper in the air fryer basket. I like these air fryer parchment paper liners. Air fry 4 at a time at 325 degrees for 8 minutes. Flip them over and air fry another 3 to 5 minutes.
Stuffing the biscuits is the hardest part. Just have a little patience and be sure to seal the edges well.
Be sure the biscuits have plenty of space around them in the air fryer. I can fit 4 at a time.
RECIPE TIPS:
Do not crowd the air fryer basket. Keep in mind the biscuits will increase in size and you don’t want them touching each other when they do or they will stick together.
Sausage can be substituted for bacon.

Ingredients
- 6 slices bacon, chopped
- 1 tablespoon butter
- 5 large eggs
- 1 (8-count) tube refrigerated biscuits, homestyle or flaky layers
- 1 cup shredded sharp cheddar cheese
- 1 large egg, beaten with a little water
Instructions

Cook bacon in a nonstick skillet until crispy. Remove with a slotted spoon and place on a plate lined with paper towels.

Drain bacon grease out of pan. (Can be used for another use.) Wipe skillet clean.
Beat the eggs with a little salt.

Add butter to the skillet and place over medium heat. When hot, add eggs. Cook eggs until just set. You want them a little undercooked since they will cook more in the air fryer.

Pull each biscuit into 2 layers, leaving it attached on one side. Place a mound of eggs, cheese and bacon on each one.
Seal the edges completely.

Brush the tops of the biscuits with egg wash.

Place a parchment paper liner in the air fryer basket. Air fry 4 biscuit bombs at a time.
Air fry at 325 degrees for 8 minutes, Flip them over and air fry another 3 to 5 minutes or until biscuits are totally cooked.
Repeat with second batch.

Optional: When done, sprinkle a little more shredded cheddar on top of each one and air fry about 30 seconds to melt the cheese. Sprinkle any leftover bacon on top.
