Sour Cream Mashed Sweet Potatoes are a super creamy, low carb side dish that pairs well with any fall meal.

A combination of sour cream and butter makes these mashed potatoes taste so rich and satisfying. In addition to the sour cream and butter, all you need for this recipe is salt, pepper, and paprika. So simple.

Less than 25 minutes are needed to make this awesome side dish, most of it hands off. Since sweet potatoes are so naturally sweet, there’s no need to add any sweetener to the recipe.

Just peel and dice the sweet potatoes, boil them for 15 to 20 minutes to get them very soft. Drain the potatoes, and mash them with butter, sour cream, salt, pepper, and paprika. A handheld masher is adequate for doing the mashing.

Sweet potatoes are an excellent source of fiber and are a low GI vegetable that digests slower than other potatoes. Since they digest more slowly, they don’t produce a spike in blood sugar even though you would think they would given how sweet they are.

Ingredients

  • 3 large sweet potatoes peeled and cut into chunks
  • 1 tablespoon salt
  • 4 tablespoons butter cut into chunks and softened
  • 1/2 cup full fat or reduced-fat sour cream
  • 2 teaspoons salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper

Instructions

  1. Place sweet potatoes in a large pot and cover with water. Add 1 tablepsoon salt and bring to a boil. Reduce heat and simmer 15 to 20 minutes or until tender. Drain potatoes and return to pot.

  2. Add butter, sour cream, salt, pepper, and paprika and mash with a potato masher. Serve.
