Slow Cooker Chicken Zoodle Soup

Slow Cooker Chicken Zoodle Soup is a wonderfully healthy low carb soup made with zucchini noodles instead of pasta. You’ll get plenty of protein and veggies with a bowl of this hearty soup. This is a soup fit to get you through the coldest of winter days.

Slow Cooker Chicken Zoodle Soup

This soup is packed with good nutrition and only takes a few minutes to prep.

Carrots, celery, and onion are placed in a 6-quart or larger slow cooker along with 6 chicken thighs. You can use either boneless or bone-in, but you don’t want the skin on. The bones will help add a little flavor and can be easily removed at the end. Bay leaves, oregano, lemon juice, amd chicken broth round out the ingredients.

Slow Cooker Chicken Zoodle Soup

Cover and cook on LOW for 6 hours. Shred the chicken, remove the bones, and add 2 medium zucchini that have been spiralized and cook on LOW 5 more minutes to soften the zucchini.

You can easily spiralize the zucchini with a spiralizer. They don’t cost much and are great for getting more vegetables into your diet. If you don’t have one, sometimes you can find spiralized zucchini in the produce section of your grocery store.

Ingredients

  • 3 carrots, peeled and sliced
  • 1 celery rib, sliced
  • 1 medium yellow or sweet onion, diced
  • 6 skinless chicken thighs, you can use bone-in or boneless
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons lemon juice
  • 6 cups chicken bone broth or chicken broth
  • 2 medium zucchini, spiralized

Instructions

  1. Place carrots, celery, and onion in 6-quart slow cooker.

  2. Place chicken on top and add bay leaves, thyme, oregano, salt, pepper, lemon juice, and broth.

  3. Cover and cook on LOW for 6 hours or on HIGH for 3 hours. Shred chicken and remove bones if you used bone-in chicken.

  4. Add zucchini  and cover and cook on LOW 5 minutes longer.
