Top with a little salsa, sour cream, and cilantro and you have a delicious keto meal. I also like to serve this Tequila Chicken with a little avocado and fresh lime. Not only is this dish super easy to prep, it’s all made in one baking dish for easy clean-up.

Recipe Tips:

  • The recipe calls for marinating the chicken for 15 minutes, but if you want to marinate it longer, you can.
  • Chicken breasts are huge these days. If yours are abnormally large, cut each one in half horiziontally so you have 2 thinner pieces. You will have double the servings, so double the amount of marinade and cheese.
  • You can vary the heat of the recipe by changing the amount of cayenne pepper. The chipotle chili powder is already going to give it some heat.
  • If you don’t have chipotle chili powder, you can use regular chili powder, but I really recommend the chipotle. It has a wonderful smoky flavor.
  • You could also use chicken tenders instead of chicken breasts and bake them for 18 to 20 minutes.
