Top with a little salsa, sour cream, and cilantro and you have a delicious keto meal. I also like to serve this Tequila Chicken with a little avocado and fresh lime. Not only is this dish super easy to prep, it’s all made in one baking dish for easy clean-up.
Recipe Tips:
- The recipe calls for marinating the chicken for 15 minutes, but if you want to marinate it longer, you can.
- Chicken breasts are huge these days. If yours are abnormally large, cut each one in half horiziontally so you have 2 thinner pieces. You will have double the servings, so double the amount of marinade and cheese.
- You can vary the heat of the recipe by changing the amount of cayenne pepper. The chipotle chili powder is already going to give it some heat.
- If you don’t have chipotle chili powder, you can use regular chili powder, but I really recommend the chipotle. It has a wonderful smoky flavor.
- You could also use chicken tenders instead of chicken breasts and bake them for 18 to 20 minutes.

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon tequila
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried minced onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon kosher salt
- pinch of cayenne pepper
- 2/3 cup shredded Mexican cheese
- 1/4 cup salsa
- 2 tablespoons sour cream
- 2 tablespoons chopped fresh cilantro
Instructions

Place chicken in a medium bowl and add next 9 ingredients. Stir to coat well. Let sit 15 minutes.

Preheat oven to 400 degrees.
Transfer chicken and to a greased baking dish. Use a rubber spatula to scrape any spicy mixture from the bowl onto the chicken.

Bake for 25 to 30 minutes.

Top chicken with cheese and return to oven for 2 minutes.

To serve, top chicken with salsa, sour cream, and cilantro.
