Ingredients
- 1 (14-ounce) jar pizza sauce, use a sugar-free sauce
- 1 tablespoon tomato paste
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- salt and pepper
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- 16 pepperoni slices
Instructions

Mix together pizza sauce and tomato paste in a small saucepan. Bring to a boil. Simmer for 5 to 10 minutes to thicken, stirring frequently.

Preheat oven to 400 degrees.

Sprinkle chicken with garlic powder and oregano. Season to taste with salt and pepper.

Heat olive oil in a large nonstick skillet. Add chicken and cook just until browned on both side.

Spread half the pizza sauce in a casserole dish that's big enough to fit 4 chicken breasts.

Place chicken breasts in the casserole dish and cover them with the remaining pizza sauce.

Bake for 25 minutes. Remove from oven and sprinkle the mozzarella and Parmesan cheeses on top.

Scatter the pepperoni slices on top.

Place back in oven and broil for 3 to 5 minutes.
