It can be hard to enjoy the taste of Italian food when eating low carb, but with pizza sauce, cheese, and pepperoni, this low carb chicken dinner will satisfy your cravings and then some. It is pure comfort food! It’s also keto-friendly and gluten-free.

I can’t help but love anything with a thick blanket of gooey, melted cheese on top. With a combination of mozzarella cheese and Parmesan cheese, you’ll get your fill of delicious cheese.

You definitely don’t want to skip the step of simmering the pizza sauce. You want it thick and flavorful so that it does not get watery as the chicken bakes. The tomato paste along with simmering the sauce really helps to get it full of flavor. This step can be done a day or two in advance.

Low Carb Pizza Chicken

Ingredients

  • 1 (14-ounce) jar pizza sauce, use a sugar-free sauce
  • 1 tablespoon tomato paste
  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • salt and pepper
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 16 pepperoni slices

Instructions

  1. Mix together pizza sauce and tomato paste in a small saucepan. Bring to a boil. Simmer for 5 to 10 minutes to thicken, stirring frequently.

  2. Preheat oven to 400 degrees.

  3. Sprinkle chicken with garlic powder and oregano. Season to taste with salt and pepper.

  4. Heat olive oil in a large nonstick skillet. Add chicken and cook just until browned on both side.

  5. Spread half the pizza sauce in a casserole dish that's big enough to fit 4 chicken breasts.

  6. Place chicken breasts in the casserole dish and cover them with the remaining pizza sauce.

  7. Bake for 25 minutes. Remove from oven and sprinkle the mozzarella and Parmesan cheeses on top.

  8. Scatter the pepperoni slices on top.

  9. Place back in oven and broil for 3 to 5 minutes.
