Low Carb Creamy Tuscan Chicken is so rich and creamy with lots of sun-dried tomatoes and spinach in a parmesan cream sauce. It is one of my very favorite low carb meals and it is perfect for the keto diet.
This elegant dinner is completely indulgent. It’s recipes like this that make it easy to follow a low carb diet.
The sun-dried tomatoes give this meal so much sweet, intense flavor. There’s also tons of garlic flavor in the sauce.
Tips for making Low Carb Creamy Tuscan Chicken:
- If you want the sauce to be rich and creamy, use heavy cream. Half-and-half or milk will not make a creamy sauce.
- Since chicken breasts are so large these days, I like to cut them in half horizontally into 2 thinner pieces. As a bonus, they cook faster.
- Add spinach in batches and it will cook down quick and easy.
- I like this chicken as is, but you could serve it over zucchini noddles or caulirice.
- Don’t skip the last step. The key to a great flavored sauce is to be sure you use plenty of salt and pepper.

My gosh I made this for dinner tonight. My family loved it. Thank yoy!
This was a real low carb treat. Rich, flavorful and satisfying.
What is the serving size for this recipe?
This was a win! Especially when my 19 year-old ate 2 servings and took some for lunch the next day.
So yummy, my grandad who is 2 loved it as well , will be cooking it again 5 stars
Yumms, as I don’t like cooking with Parmesan I left it out, it was delicious !
I substituted red peppers in place of the sundried tomatoes and it was delicious!
Great, we don’t really like sundried tomatoes so that’s good to know what will be a great substitute.
Made it tonight and will definitely be making again! This was delicious, flavorful and filling.
So so good! My husband can’t have gluten and sat there the whole time “mmm – mmm – this is heavenly. Mmm” I used halibut (would be tasty with scallops and shrimp too!) For cheese I used sharp white cheddar and mozzarella. Beside frying the spinach everything else was the same. Tasty yumminess! Adding to our monthly menu.
This recipe was quick and simple! The flavors are bold and colorful. I did increase the chicken broth, whipping cream, and Parmesan cheese so I had more sauce. I used pre butterflied chicken breast to cut down in time cutting chicken. I recommend this recipe!
We recently had to make a major diet change in the family die to kidney disease but we have kids who are kind of picky. This Tuscan chicken recipe is a huge hit though! I made modifications for our low sodium requirements but even without the sodium, this recipe is delicious!
Amazing and super easy to make. Thank you!!
I’ve made this twice now and will definitely make it again! Be sure to use heavy whipping cream, it makes a difference!
My family thoroughly enjoyed this recipe. I loved that start to finish only took 25 minutes.
I made this for my family last night. The recipe was very easy to make and my son and husband raved about it. This is definitely a keeper recipe. Thank you! Blessings!!!
So so so good! I made this for dinner and I was the only one who ate it but I didn’t care, I was planning to take the left overs for lunch the next couple of days. I brought it for lunch today, and I was already looking forward to lunch as soon as I got to work. Lol I love this recipe!
This was amazing, definitely saving this one! Packed full of flavor
Can this be frozen?
Obviously I can’t say for sure but I would not think this recipe a good candidate for freezing because of the cream in it. If you want to try to make it easier to fix in a pinch then maybe you could pound and or cut the chicken breasts the right size, season them then freeze them that would save you a step. Again I am not an expert, that was just my opinion. The recipe sure was good though!
I just recently made a Keto Tuscan Soup and it was such a hit in my family and even neighbors tried it, and now they are all begging me to make it again. I’m so glad to find this recipe and am so excited to try it. I know this will be a hit also. Thanks so much for posting it. I can’t wait to make it. They will be so surprised.
Very good & easy to prepare! Can’t wait to make for friends
This is so delicious! I made this for dinner and it made me forget about the crappy day I had! 🙂
This recipe was delicious. My kids who don’t normally like sun dried tomatoes- loved this. I doubled the recipe and served it over pasta. I think everyone finished it all and several got seconds. I highly recommend.
Made this dish tonight and it was delicious. I would maybe add a little more chicken broth and heavy whipping cream and a little more parmesan just because I like a little more sauce. And that sauce is exceptionally good. I put it over some cauliflower rice and a small salad and it was delicious. I will definitely fix this again! Easy to make also.
Delicious did add mushrooms but Other than that stuck to the recipe and it was delicious everyone loved it would like for the sauce to be slightly thicker but other than that it was perfect yummy and healthy will definitely be making this one again. Thanks for the delicious recipe
It was amazing!! Are the nutrition facts just for 1 serving??
Not a fan. I’ll tweak it to make more sauce and add some white wine. Fresh cherry tomatoes halved would be be a nice substitute for the sun dried tomatoes since I’m not a fan of those in cooked dishes.
This was so tasty and full of flavor. Thank you for sharing will definitely make it again!
This was easy and delicious. I tend to lightly season so I definitely needed the salt and pepper at the end.. I also served this over riced cauliflower. Will definitely make this again.
Made this tonight. Absolutely delicious! I am no masterchef but followed the recipe easily and it was a winner!! 10/10
Great recipe ,easy to follow ,extremely tasty. I just couldn’t find when I was meant to return the chicken ,did I miss it?
9/10 for me.
