Light Chicken Salad

Light Chicken Salad is wonderfully creamy but is light on the mayonnaise for a healthy, slimmed down version of traditional southern chicken salad. For a low carb meal, serve on a bed of lettuce or with sliced cucumbers and red bell pepper.

To keep it super creamy without adding tons of fat and calories, I use a mixture of cottage cheese and mayonnaise. They get processed in a food processor to get rid of the lumps in the cottage cheese. The result is a smooth and creamy blend that makes a deliciously light chicken salad.

As an added bonus, the cottage cheese gives this Light Chicken Salad extra protein. Cottage cheese is a wonderfully versatile and healthy ingredient. Use it to add creaminess to other foods like Skinny Deviled Eggs. It also makes a great sub for sour cream in dips and casseroles.

Cottage cheese is a wonderful addition to a healthy diet.

For added flavor, this Skinny Chicken Salad has garlic powder, white pepper, paprika, celery, and red onion. You could also add a little hard boiled egg.

One serving of this Light Chicken Salad only has 128  calories.

Light Chicken Salad

Ingredients

  • 2 to 3 cups cooked and chopped white chicken meat
  • 1/2 cup low fat cottage cheese
  • 1/4 cup light mayonnaise
  • 1/2 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/4 to 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon paprika
  • 1/3 cup chopped celery
  • 1/3 cup chopped red or sweet onion

Instructions

  1. Place chicken in a large bowl.

  2. Process cottage cheese, mayonnaise, lemon juice, and honey in a food processor until smooth.

  3. Add to bowl with chicken. Stir in remaining ingredients.

  4. If you desire a more chopped up texture, place half of chicken salad in processor and pulse a few times to grind it up and then mix back into the other half.

    This is really good! Love the paprika and honey added to this recipe, but the white pepper makes the real difference..
