Light Chicken Salad is wonderfully creamy but is light on the mayonnaise for a healthy, slimmed down version of traditional southern chicken salad.
Ingredients
- 2 to 3 cups cooked and chopped white chicken meat
- 1/2 cup low fat cottage cheese
- 1/4 cup light mayonnaise
- 1/2 tablespoon lemon juice
- 1 teaspoon honey
- 1/4 to 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon white pepper
- 1/4 teaspoon paprika
- 1/3 cup chopped celery
- 1/3 cup chopped red or sweet onion
Instructions

Place chicken in a large bowl.

Process cottage cheese, mayonnaise, lemon juice, and honey in a food processor until smooth.

Add to bowl with chicken. Stir in remaining ingredients.

If you desire a more chopped up texture, place half of chicken salad in processor and pulse a few times to grind it up and then mix back into the other half.
