Turnip Greens make a wonderfully healthy side dish. They are low in calories, high in Vitamin A and C and have a good amount of Calcium and iron.
Turnip Greens have a slightly bitter flavor. A little sweet onion and garlic along with a splash of apple cider vinegar and a teaspoon of brown sugar help temper the bitterness.
Tips for cooking Turnip Greens:
- Make sure you clean them well. Add them to a large bowl of fresh water and swish them around. Repeat a few times to get all of the sand and dirt off.
- The stems are much less fibrous and tough than those of collard greens. Chop them up and cook them if you wish.
- Hot pepper sauce tastes wonderful on turnip greens.
