How To Serve Cheesy Chorizo Breakfast Casserole
This egg and sausage breakfast casserole is really hearty and full of peppers, mushrooms, and two types of cheese. Quite filling on its own, I like to top it with sour cream, green onion, and sliced avocado. Salsa, black olives, and chopped fresh cilantro would also be good toppings.
Super Creamy Texture
The addition of 4 ounces of cream cheese creates a really rich and creamy texture in this breakfast casserole.
Mexican-Style Chorizo
Be sure to use Mexican-style Chorizo, not spanish chorizo. Mexican chorizo is ground pork with lots of added seasonings. It has a good deal of fat and flavor. You will cook it with the onions, peppers, and mushrooms before adding it to the casserole.
How Long To Bake
This casserole will take about 30 to 35 minutes to bake in a 350 degree F oven. Be sure the eggs have completely set up before removing it from the oven.
Variations
- Instead of a combination or Pepper Jack cheese and cheddar cheese, you can use all one or the other or you can use Monterey Jack or Colby Jack cheese.
- Leave out the mushrooms if you don’t like them.
- Ground breakfast sausage (like Jimmy Dean) can be used instead of chorizo.
Storage
Leftovers will keep in an airtight container in the refrigerator for 4 to 5 days and can be reheated in a microwave.

Ingredients
- 1 teaspoon butter
- 12 ounces Mexican-style ground chorizo
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper or poblano pepper
- 4 ounces sliced white or cemini mushrooms
- 4 ounces cheam cheese, cut into pieces and softened
- 8 large eggs
- 2 tablespoons half-and-half or heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup shredded Pepper Jack cheese
- 1/2 cup shredded sharp cheddar cheese
- sour cream, sliced green onion, and sliced avocado for serving, optional
Instructions

Preheat oven to 350 degrees.

Melt butter in a large nonstick skillet. Add chorizo and break it apart. Once chorizo is in pieces, add onion, pepper, and mushrooms.
Cook until chorizo is cooked through, breaking it apart more as it cooks.

Add cream cheese to the skillet and stir until melted. Transfer mixture to a 7×11-inch greased baking dish.

In a medium bowl, whisk together eggs, milk, salt, and pepper. Stir in both types of cheese.

Pour egg mixture over chorizo mixture.

Bake for 30 to 35 minutes, or until cooked through.

Serve with avocado, green onions, and sour cream if desired.
