Buffalo Stuffed Chicken is stuffed with a mixture of cream cheese, cheddar cheese, Buffalo sauce, green onions, and blue cheese and basted with Buffalo sauce. Drizzle with blue cheese dressing and you have an incredibly delicious low carb meal.
Buffalo Stuffed Chicken is wonderfully spicy, rich, and creamy. Stuffing chicken is one of my favorite ways to prepare chicken. Chicken can sometimes turn out a little dry and flavorless, but not when you stuff it with lots of tasty ingredients.
How to make Buffalo Stuffed Chicken:
Cut a slit in each chicken breast to form a pocket. Stuff the pockets full of a cream cheese, cheddar cheese, green onion, Buffalo sauce, and blue cheese mixture. Place the stuffed chicken breasts in a baking dish and brush them with buffalo sauce.
Bake at 375 degrees for 25 to 30 minutes. You’ll want to baste them with some Buffalo sauce once or twice while they are baking. If you want to brown them up some, turn the broiler on for the last few minutes of cooking. To serve, drizzle with some Buffalo sauce and some Blue Cheese Dressing.
Tips for making:
- You could use Ranch dressing instead of Blue Cheese Dressing if that is more to your liking.
- You can use any Buffalo wing sauce you like but be sure to use wing sauce and not store bought hot sauce. I like to use Frank’s Red Hot Wing Sauce.
- Since this Buffalo Stuffed Chicken is rich and filling I like to serve it with a simple green salad. Celery sticks would also go great with it.

Ingredients
- 4 ounces cream cheese, softened
- 1 tablespoon Buffalo sauce
- 2 green onions, sliced
- 1/2 cup cheddar cheese
- 2 tablespoons blue cheese crumbles
- 4 boneless, skinless chicken breasts
- salt and pepper
- Buffalo sauce and Blue cheese dressing, sliced green onion
Instructions

Preheat oven to 375 degrees.

In a medium bowl, stir together cream cheese, buffalo sauce, green onion, cheddar cheese, and blue cheese.

Place stuffed chicken breasts in a baking dish. Brush Buffalo sauce over the top of the chicken breasts.

Bake for 25 to 30 minues, basting with a little more Buffalo sauce once or twice while it is cooking.

If desired, turn oven to broil for the last few minutes of cooking time to brown the chicken some.

Drizzle with more Buffalo sauce and blue cheese dressing and sprinkle with sliced green onion. Serve.
