Balsamic Herb Vinaigrette

 

It’s a simple, tasty recipe that you’ll never grow tired of. This easy dressing will bring the most boring bowl of salad greens to life.

Balsamic Herb Vinaigrette Recipe Tips:

  • Use a good quality balsamic vinegar. Preferably an aged one. As balsamic vinegar ages, it becomes sweeter and milder with a richer flavor. The more sweetness the balsamic vinegar adds, the less honey you will need to use.
  • Will keep in the refrigerator for several weeks.

 

Balsamic Vinaigrette with fresh herbs

 

  • A combination of fresh herbs is best with this dressing. I try and use at least 3 different herbs. Recently I started growing herbs hydrophonically and I love that I have fresh herbs on my kitchen counter 12 months out of the year.
  • This Balsamic Herb Vinaigrette tastes great on any type of salad or on roasted vegetables. The herbs can be tweaked to suit your tastes. Use what you have on hand or you can use dried herbs if you don’t have fresh. Typically you would use about 1 teaspoon of dried for each tablespoon of fresh, but I don’t think I would add more than a teaspoon total of dried herbs to this dressing.

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 teaspoons Dijon mustard
  • 1 small garlic clove, minced
  • 2 tablespoons chopped fresh herbs (parsley, dill ,chives, basil, oregano are all good choices)
  • 1/3 cup extra-virgin olive oil

Instructions

  1. Combine all ingredients in a mason jar. Place lid on and shake well.

  2. Refrigerate for at least an hour before serving to let the flavors blend.

Recipe Notes

If you don't have a mason jar, you can whisk everything in a bowl. Whisk in the oil last, and add it gradually.
