Kalamata Olive and Feta Dressing

Kalamata Olive and Feta Dressing is a Greek-style salad dressing with so much flavor. I love to serve it tossed with a green leaf salad with cucumbers, tomatoes, and red bell pepper. It’s also great on a spinach salad or as a pasta salad dressing.

Olive and Feta Dressing

The chopped up kalamata olives and crumbled feta cheese give this salad dressing lots of salty flavor. A little honey adds a touch of sweetness and the acidity comes from lemon juice and red wine vinegar. The flavors only get better with time.

Olive and Feta Dressing will keep refrigerated for 1 week.

I love, love, love to eat salads, but I struggle to find bottled dressings that I really like. They either don’t taste fresh, or worse, have a strong chemical flavor.

You really can’t go wrong with a homemade dressing. They only take minutes to prepare and you can enjoy them all week long.

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1/4 cup finely chopped kalamata olives
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons finely chopped red onion
  • 1 garlic clove, minced
  • 2 teaspoons Dijon mustard
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in a Mason jar. Screw the lid on and shake. 

    Or whisk together all ingredients in a medium bowl. Refrigerate
