Air Fryer Spinach and Feta Stuffed Mushrooms- only a handful of ingredients and 6 minutes in the air fryer are needed to make this deliciously healthy appetizer.
A little sour cream, spinach, feta cheese, and Parmesan cheese makes a wonderfully creamy and salty filling for mushrooms. I also like to add a little Creole or Cajun seasoning to add just a little spice.
Stuffed mushrooms are so quick and easy to make in the air fryer. They take at least 20 minutes to bake in the oven, plus you have to wait for the oven to pre-heat. The air fryer takes just 6 to 8 minutes. So convenient!
Stuffed mushrooms are one of my favorite party foods. They also make a great addition to a healthy meal. What’s really great about them is they can be assembled and refrigerated until you are ready to cook them. This can be done up to 24 hours ahead of time. Leftovers reheat well and will keep in an airtight container in the refrigerator for 4 days.
Remove the stems from the mushrooms.
Fill the mushroom caps with filling.
How to Make Air Fryer Spinach and Feta Stuffed Mushrooms:
- Clean the mushrooms and remove the stems. It’s best to clean the mushrooms with a damp paper towel. I also take a spoon and scrape some of the flesh and the gills out so there is plenty of room for the filling.
- Mix the filling together.
- Stuff the mushroom caps.
- Air fry them.
So easy!!!
If you have just a few stuffed mushrooms leftover, try chopping them and adding them to an egg scramble or omelet.

Ingredients
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed to get the water out
- 1/4 cup low-fat sour cream
- 2 green onions, sliced
- 1 cup crumbled feta cheese
- 1/2 teaspoon Creole seasoning
- 1/4 teaspoon black pepper
- 12 large white mushrooms, stems removed
- 2 tablespoons grated Parmesan cheese
Instructions

In a medium bowl, stir together spinach, sour cream, green onion, feta cheese, Creole seasoning, and black pepper.

Fill the mushrrom caps with the spinach mixture.

Sprinkle Parmesan on top.

Preheat air fryer to 390 degrees.
Air fry in for 6 to 8 minutes. Air fry them in two batches if necessary. You don't want to crowd the basket.
