This quick and easy Air Fryer recipe can be served over cauliflower rice or with a Greek salad for a truly falvorful and healthy low carb meal. Great for an easy lunch or weeknight meal.
To make this low carb meal, 1 chicken breast and 1/2 a red onion, red bell pepper, and zucchini are cut into bite-sized pieces and tossed with olive oil, oregano, parsley, thyme, garlic powder, salt and pepper.
NOTE: This step can be done a day in advance and refrigerated until you are ready.
Place the mixture in your Air Fryer basket and Air Fry at 380 degrees for 12-15 minutes. Sprinkle with feta cheese if desired and serve.

- This recipe makes 2 servings which is about all that can fit in the Air Fryer at one time. It can easily be doubled.
- I use the Powder Air Fryer XL. Different air fryers cook foods at different rates. Use the cooking time as an estimate only. It’s easy to open the Air Fryer and take a peek at the food and it really doesn’t slow down the cooking time too much.

- 1 (10-ounce) boneless, skinless chicken breast
- 1/2 medium red onion, coarsley chopped
- 1/2 red bell pepper, coarsley chopped
- 1/2 medium zucchini, coarsely chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- salt and pepper
- 1 1/2 tablespoons olive, coconut, or avocado oil
- 2 tablespoons crumbled feta cheese
Instructions

Cut chicken into 1-inch cubes.
Combine chicken, red onion, bell pepper, and zucchini in a medium bowl.

Add oregano, parsley, garlic powder and thyme. Season to taste with salt and pepper.

Drizzle with oil and toss to coat evenly.

Place mixture in the Air Fryer basket and cook at 380 degrees for 12 to 15 minutes, shaking basket halfway through.
