Skinny Meatloaf is lightened up comfort food made with ground turkey. Serve with some skinny mashed potatoes and steamed green beans for a full meal.
Meatloaf, especially low-fat meatloaf, can be a little dry and flavorless. But not this Skinny Meatloaf. Sauteed onions, dried thyme, garlic powder, and a sweet ketchup glaze give this meal tons of flavor.
Meatloaf is so easy to make and it is one of my very favorite weeknight meals. It’s an easy meal to lighten up by switching out lean ground turkey for ground beef. You can either use 93% lean or 99% lean ground turkey.
Just mix all the ingredients in a bowl and transfer the mixture to a 9×5-inch loaf pan. Brush the top with a mixture of ketchup and Worcestershire sauce for a glaze and bake for just under an hour. Let cool for 10 minutes and then cut into slices.

Skinny Meatloaf is lightened up comfort food made with ground turkey. Deliciously moist and coated in a ketchup glaze.
Ingredients
- 1 teaspoon olive oil
- 1 cup chopped onion
- 1 1/2 pounds lean (93 to 99%) ground turkey
- 2/3 cup seasoned bread crumbs
- 1 large egg
- 1 egg yolk
- 1/4 cup ketchup
- 1/2 tablespoon spicy or brown mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 3 tablepsoons ketchup
- 2 teaspoons Worcestershire sauce
Instructions

Heat oil in a nonstick pan. Add onion and cook until soft, about 5 minutes. Let cool.

In a large bowl, combine all ingredients except the 3 tablespoons of ketchup and Worcestershire sauce. Mix until evenly mixed and transfer to a lightly greased 9x5-inch loaf pan.

Combine the ketchup and Worcestershire sauce and brush on top.

Bake at 350 degrees for 55 minutes.
