Tips for making Skinny Mashed Potatoes
I like to use Yukon Gold potatoes to make mashed potatoes because I think they are the creamiest potatoes and they even taste a little bit buttery.
I like to use a potato masher, a potato ricer, or an hand-held mixer to mash the potatoes. A potato ricer is best, but you may not want to spend the money on something to just make mashed potatoes.

Chicken broth! It adds flavor, but hardly any calories or carbs. Together with 1% milk, the chicken broth makes these mashed potatoes a real winner. Perfectly light and fluffy. You won’t miss the fat and calories.

Skinny Mashed Potatoes
Skinny Mashed Potatoes taste wonderfully creamy and buttery but they are so much lighter than regular mashed potatoes. And lower in calories and fat too!
Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cut into quarters
- 1/4 cup chicken broth
- 1/3 cup 1% milk
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chopped fresh chives, optional
Instructions

Place potatoes in a large pot and cover with water. Bring to a boil. Simmer for 20 minutes or until soft.

Drain potatoes and return to pot. Place pot over low heat for just a few seconds to evaporate any excess water.

Remove from heat and add chicken broth, milk, butter, salt and pepper.

Mash until smooth with a potato masher or use a potato ricer. Taste for seasoning and add more salt and pepper to taste. Sprinkle chives on top if desired.
