Typically stuffed peppers are stuffed with a mixture of ground beef and rice, but leave the rice out and they still have all the flavor, but fewer carbs. These taco stuffed pepper taste like tacos without the taco shell. So tasty!
The Air Fryer is one of my favorite small kitchen appliances, if not my favorite. It cooks food so much faster than an oven. Stuffed Peppers take about 45 minutes to cook in the oven, but only 15 minutes in the air fryer. Perfect for a weeknight meal!
Tips for Making Air Fryer Taco Stuffed Peppers:
- Use red, orange, or yellow peppers instead of green if you wish.
- The ground beef needs to be browned in a skillet before the peppers are air fried, but the filling can easily be made a day in advance and then these peppers can easily be made in under 20 minutes. You can even go ahead and stuff the peppers in advance and refrigerate them until you are ready to air fry them.
- These stuffed peppers have a little spice from the Pepper Jack cheese. Make them spicier by using HOT Rotel tomatoes.
I use the Power XL Air Fryer and love it. The Ninja Air Fryer is another good one.

Air Fryer Taco Stuffed Peppers- these low carb peppers are stuffed with seasoned ground beef, Rotel tomatoes, and Pepper Jack cheese. They only take 15 minutes to cook in the air fryer. So quick and easy!
Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10-ounce) can diced tomatoes and green chiles, drained
- 3 medium green bell peppers
- 1 cup shredded Pepper Jack cheese
Instructions

Add ground beef and onion to a nonstick skillet set over medium-high heat. Break the ground beef apart as it cooks.

When there is no pink left in the ground beef, add chili powder, cumin, garlic powder, salt, pepper, and diced tomatoes. Cook for 3 to 5 minutes.

Cut each bell pepper in half and remove seeds and white membrane.

Divide ground beef mixture evenly between peppers. Sprinkle cheese on top.

You will need to cook the peppers in two batches.
Place 3 peppers in the air fryer and set to cook at 350 degrees for 15 minutes. Cooking times can vary from Air Fryer to Air Fryer so take a peek after 12 minutes to see if they are done. Peppers should be fork tender.
