Tomato Mozzarella Chicken is a flavorful, easy to make dish that combines chicken breasts with the classic Italian flavors of tomato, fresh mozzarella, and basil.

The whole thing is made on the stovetop and comes together in under 30 minutes. Perfect for a weeknight meal.
With lots of cherry tomatoes and some tomato paste, this dish has a rich tomato flavor.

How To Make Tomato Mozzarella Chicken
- Prep the chicken. Pat the chicken dry and season with Italian seasoning, red pepper flakes, salt and pepper.
- Cook the chicken. Cook the chicken for 4 to 5 minutes per side and set it aside.
- Make the sauce. Cook the onion, the garlic, and cherry tomatoes and then add Italian seasoning, tomato paste, chicken broth, and balsamic vinegar. Stir to mix together. Season with salt and pepper.
- Finish. Return the chicken to the skillet and sprinkle with Parmesan cheese. Add mozzarella cheese. When the cheese melts, sprinkle with basil and serve.
Additions and Variations
- Use chicken thighs in place of chicken breasts.
- Add some sliced sun-dried tomatoes for an even more intense tomato flavor.
- Add a few handfuls of baby spinach when you make the sauce.

Recipe Tips
- If the chicken breasts are thick, either pound them out some or cut them in half lengthwise to make two thinner cutlets.
- Be careful not to overcook the chicken. Chicken breasts get tough and dry if they are overcooked. Chicken is done when it reaches an internal temperature of 165 degrees.
How To Serve

Storage

Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper flakes
- salt and pepper
- 2 tablespoons olive oil
- ½ cup diced onion
- 4 garlic cloves, minced
- 1½ cups cherry tomatoes
- ½ teaspoon Italian seasoning
- 2 tablespoons tomato paste
- ⅔ cup chicken broth
- 2 teaspoons balsamic vinegar
- ⅓ cups freshly shredded Parmesan cheese
- 8 ounces mozzarella, sliced
- 2 tablespoons chopped fresh basil
Instructions

Pat chicken breasts dry and sprinkle with Italian seasoning and crushed red pepper flakes. Season with salt and pepper.

Heat olive oil over medium-high heat in a large skillet. Add chicken and cook for 4 to 5 minutes per side. Remove and set aside.

Add onion to skillet and cook 3 minutes.
Add garlic and tomatoes and cook 2 minutes.

Add Italian seasoning, tomato paste, chicken broth, and balsamic vinegar and stir to mix well. Add about ¼ teaspoon of salt and ¼ teaspoon of pepper.

Return chicken to skillet and sprinkle with Parmesan cheese. Arrange mozzarella slices around chicken. Cover and simmer for a few minutes to melt the cheese.
