Tomato Mozzarella Chicken is a flavorful, easy to make dish that combines chicken breasts with the classic Italian flavors of tomato, fresh mozzarella, and basil.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • salt and pepper
  • 2 tablespoons olive oil
  • ½ cup diced onion
  • 4 garlic cloves, minced
  • cups cherry tomatoes
  • ½ teaspoon Italian seasoning
  • 2 tablespoons tomato paste
  • cup chicken broth
  • 2 teaspoons balsamic vinegar
  • cups freshly shredded Parmesan cheese
  • 8 ounces mozzarella, sliced
  • 2 tablespoons chopped fresh basil

Instructions

  1. Pat chicken breasts dry and sprinkle with Italian seasoning and crushed red pepper flakes. Season with salt and pepper.

  2. Heat olive oil over medium-high heat in a large skillet. Add chicken and cook for 4 to 5 minutes per side. Remove and set aside.

  3. Add onion to skillet and cook 3 minutes.

    Add garlic and tomatoes and cook 2 minutes.

  4. Add Italian seasoning, tomato paste, chicken broth, and balsamic vinegar and stir to mix well. Add about ¼ teaspoon of salt and ¼ teaspoon of pepper.

  5. Return chicken to skillet and sprinkle with Parmesan cheese. Arrange mozzarella slices around chicken. Cover and simmer for a few minutes to melt the cheese.

  6. Sprinkle with basil and serve.
