Skinny Creamy Southern Coleslaw is a crunchy, fresh tasting coleslaw with plenty of creaminess and the perfect balance between sweet and tangy. It is perfect for summer cookouts and picnics.
A southern cookout isn’t complete without coleslaw and this one is virtually guilt-free. Typically I make a coleslaw with lots and lots of mayo for the creaminess, but there is a way to have a creamy coleslaw without the high calories and fat.
This Skinny Creamy Southern Coleslaw has a mixture of nonfat Greek yogurt and just a little light mayonnaise for its creaminess. I’m not always a fan of using nonfat Greek yogurt in recipes but it really works in this one. The Greek yogurt combines with a splash of apple cider vinegar to give the coleslaw a little tang. Two tablespoons of sugar give some sweetness and balances the tang. You could reduce the calories even more by using Splenda or Truvia instead of the sugar.
For convenience sake, I use a bag of coleslaw mix plus an extra shredded carrot. Having a little more carrot adds to the sweetness.

Skinny Creamy Southern Coleslaw
Ingredients
- 1/3 cup non-fat plain Greek yogurt
- 1/4 cup light mayonnaise
- 2 tablespoons sugar
- 1 tablespoon low-fat milk
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon black pepper
- 1 (10-ounce) pacakge shredded coleslaw mix
- 1 medium carrot, shredded
- 1/4 teaspoon celery seed
- 2 green onions, sliced
Instructions

In a small bowl, stir together yogurt, mayonnaise, sugar, milk, vinegar, and black pepper.

Place coleslaw mix and shredded carrot in a large bowl.

Pour yogurt mixture on top. Add green onions and celery seeds and mix everything together.
