Peanut Butter and Banana Oatmeal Bars make a healthy on the go breakfast. These breakfast bars are sweet and moist with chocolate chips and a layer of peanut butter on top.

A little cinnamon and chocolate chips really up the flavor of these Peanut Butter and Banana Oatmeal Bars. The oats give the bars a nice chewy texture.

There are so many things to love about these bars. They are easy to make and only 1 bowl is needed. Mix together all ingredients in a large bowl, spread the mixture in an 8-inch square baking dish. Less then 20 minutes in the oven and they are done.

Tips for making Peanut Butter and Banana Oatmeal Bars:

  • Be sure to use super ripe bananas. They should have lots of black spots on the peels. This recipe really relies on the sweetness of the bananas and ripe bananas have alot more sweetness.

Substitutions can be made based on dietary concerns or what you have in your pantry:

  • Use yogurt instead of applesauce.
  • Use quick-cooking oats instead of old-fashioned oats.
  • To make this recipe vegan, leave out the egg and use 1 tablespoon ground chia seeds with 2 1/2 tablespoons hot water.
  • Use whole wheat flour instead of all-purpose flour.
  • Use almond butter instead of peanut butter.

Ingredients

  • 1/2 cup mashed very ripe bananas
  • 1/3 cup applesauce
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter

Instructions

  1. Preheat oven to 350 degrees and grease an 8-inch square baking dish.

  2. In a large bowl, mix together banana, applesauce, brown sugar, and egg until blended well.

  3. Add vanilla, salt, baking soda, cinnamon, flour, and oats and stir well. 

  4. Stir in chocolate chips and transfer to prepared baking dish, spreading it evenly.

  5. Bake for 16 to 20 minutes or until a toothpick inserted in the middle comes out clean.

  6. Let cool 5 minutes and then spread peanut butter on top. Cut into squares and serve.
