- Add pepperoncini peppers.

- Use a plant-based meat substitute to make it vegetarian.

Ingredients
Pickled Red Onions
- 1/2 medium red onion, sliced
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon sugar
- 1/4 teaspoon salt
Seasoned Ground Beef
- 1 pound lean ground beef
- 1 teaspoon dried oregano
- ½ teaspoon dried dill
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Remaining Ingredients
- 4 cups cooked white rice
- 1 cup halved grape tomatoes
- 1 cup diced cucumber
- 1 cup hummus
- 1 cup micro-greens
- ½ cup kalamata olives
- ½ crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Instructions

In a small saucepan, bring vinegar, water, sugar and salt to a boil. Add onions and remove from heat.
Transfer to a bowl and refrigerate for at least 2 hours.

Brown and crumble the ground beef in a large nonstick skillet.
Add seasonings and cook 1 minute.

To assemble, divide the rice and seasoned beef between 4 bowls.
Add tomatoes, cucumbers, humus, olives, feta cheese, parsley and pickled red onions. Serve.
