Mediterranean Hummus Bowls with Ground Beef are full of rice, tomatoes, cucumbers, feta cheese, olives, and pickled red onions. So much flavor in every bite!

Ingredients

Pickled Red Onions

  • 1/2 medium red onion, sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

Seasoned Ground Beef

  • 1 pound lean ground beef
  • 1 teaspoon dried oregano
  • ½ teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Remaining Ingredients

  • 4 cups cooked white rice
  • 1 cup halved grape tomatoes
  • 1 cup diced cucumber
  • 1 cup hummus
  • 1 cup micro-greens
  • ½ cup kalamata olives
  • ½ crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a small saucepan, bring vinegar, water, sugar and salt to a boil. Add onions and remove from heat.

    Transfer to a bowl and refrigerate for at least 2 hours.

  2. Brown and crumble the ground beef in a large nonstick skillet.

    Add seasonings and cook 1 minute.

  3. To assemble, divide the rice and seasoned beef between 4 bowls.

    Add tomatoes, cucumbers, humus, olives, feta cheese, parsley and pickled red onions. Serve.
