
Mediterranean Hummus Bowls with Ground Beef are full of rice, tomatoes, cucumbers, feta cheese, olives, and pickled red onions. So much flavor in every bite!
In a small saucepan, bring vinegar, water, sugar and salt to a boil. Add onions and remove from heat.
Transfer to a bowl and refrigerate for at least 2 hours.
Brown and crumble the ground beef in a large nonstick skillet.
Add seasonings and cook 1 minute.
To assemble, divide the rice and seasoned beef between 4 bowls.
Add tomatoes, cucumbers, humus, olives, feta cheese, parsley and pickled red onions. Serve.
