These Low Carb English Muffins are so good. They even have the nooks and crannies that regular English muffins have.
You’ll need a microwave and 4-inch ramekins to make these gluten-free English Muffins. To make one, melt one tablespoon of unsalted butter in a ramekin. Add almond flour, coconut flour, an egg, a pinch of salt, and a little baking powder to the ramekin and mix together. Microwave for 80 to 90 seconds. When done it should feel spongy on the top. If necessary, microwave for an additional 10 to 15 seconds.
You can eat the English muffins as is, but I think they taste better if you slice them and place them in a toaster oven to crisp them up some.
Recipe Tips:
If you use salted butter, omit the pinch of salt.
If you don’t have a microwave, you could bake them at 350 degrees for 15 minutes. You can make multiple at one time this way. If you microwave them, make them one at a time.
My favorite way to serve these Keto English Muffins is spread with cream cheese and topped with smoked salmon, red onion, and capers. So good! They also taste great with butter. Or you can make a Bacon, Egg, and Cheese Sandwich with them. Yum!

Ingredients
- 1 tablespoon unsalted butter
- 2 1/2 tablespoons almond flour
- 1/2 tablespoon coconut flour
- 1 large egg
- pinch of salt
- 1/2 teaspoon gluten-free baking powder
Instructions

Place butter in a 4-inch ramekin. Microwave for 30 seconds.

Add remaining ingredients and stir with a fork until well combined.

Microwave for 80 to 90 seconds or until it feels springy on top.
Alternately, you can bake it at 350 degrees for 15 minutes.

Remove from ramekin. Let cool. Slice in half and place in toaster oven until crispy. Or you can place it cut side down in a nonstick skillet greased with a little coconut oil or butter. Cook over medium-high until crispy.
