For best results, these biscuits need to be baked in a muffin tin. The batter is a little wetter than your typical biscuit batter and the muffin tin will keep them from spreading out as they bake.
You could use another type of cheese besides cheddar. Pepper Jack would be really good.

Ingredients
- 1 1/2 cups almond flour
- 1 tablespoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup sour cream
- 4 tablespoons butter melted
- 1/3 cup shredded cheddar cheese
Instructions

Preheat oven to 400 degrees and spray a muffin tin with cooking spray.

In a large bowl, whisk together almond flour, baking powder, salt, and garlic powder.

In a medium bowl, lightly beat the eggs. Add sour cream and butter and mix.

Add egg mixture to almond flour mixture. Stir just until mixed.

Stir in cheese.

Fill muffin cups 2/3 full with dough. You should get about 10 biscuits.

Bake for 10 to 12 minutes.
