Low Carb Cheeseburger Cauliflower Casserole is pure comfort food, keto-style. This easy ground beef casserole is so rich and creamy and full of bacon.

The creaminess comes from a combination if cream cheese and heavy  ream. There’s also 2 eggs in the casserole to help bind it together and add more protein.

The chunks of cauliflower blend right into the casserole and almost taste like potatoes, especially if you chop them up small. So give this recipe a try even if your’e not a huge fan of cauliflower.

To make Low Carb Cheeseburger Cauliflower Casserole, you’ll first brown the ground beef and then add steak seasoning, cream cheese, and half the cheddar cheese. Once the cream cheese is melted and blended in, transfer the mixture to a baking dish. Scatter the cauliflower evenly on top.

Whisk togther the eggs, heavy cream, garlic powder and the remaining cheddar cheese and pour into the casserole dish. Sprinkle with the bacon and bake for about 25 minutes.

Ingredients

  • 1 1/2 pounds ground beef
  • 2 teaspoons Montreal steak seasoning
  • 4 ounces cream cheese, cut into cubes
  • 1 cup shredded cheddar cheese, divided
  • 1 bag frozen cauliflower florets
  • 2 eggs
  • 1/4 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat oven to 375 degrees and lightly grease a 7x11-inch casserole dish.

  2. Cook ground beef in a nonstick skillet, crumbling it as it cooks. Drain off excess grease.

  3. Add the steak seasoning, cream cheese, and 1/2 cup of cheddar cheese to the skillet. Cook over low heat until the cream cheese is melted and blended in.

  4. Microwave cauliflower for a little less time than package instructions say to. (It will cook more in the oven.)

  5. Transfer ground beef mixture to the prepared cassrole dish.

  6. In a bowl, whisk together eggs, garlic powder, heavy cream, and remaining 1/2 cup cheddar cheese.

    Pour over ground beef mixture.

  7. Sprinkle bacon on top.

  8. Place in oven for 25 to 30 minutes.
