This recipe couldn’t be easier and if you are an okra lover, this recipe is for you. The okra gets so crispy in the oven and soaks up lots of salty, smoky bacon flavor. And then there’s the bacon. Nothing to not like about that right? Makes a delicious low carb, gluten-free side dish to pair with any kind of meat.
Okra is a super healthy summer vegetable and it is high in fiber and low in calories. Growing up I pretty much only ate okra fried or in gumbo or soup, but I was missing out. Roasted okra is so, so good and much healthier than fried. If the jury is still out on okra, try this recipe. It makes converts of even the most hardcore okra haters. As a bonus, roasted okra is rarely slimy in texture.
The bacon releases plenty of grease for the okra to caramelize in so there’s no need for any oil.
How to Make This Recipe:
- Preheat the oven. A really hot oven helps get the okra brown and crispy.
- Spray a rimmed baking sheet with cooking spray. Place the sliced okra on the baking sheet and season with salt and pepper.
- Scatter the bacon around the okra.
- Bake for 25 to 30 minutes, giving it a stir halfway through.

Don’t buy okra pods that are big and long. Look for smaller pods. They are more tender. The larger pods can be really fibrous.
I like to cut the okra into about a 1/2-inch slice.
Leftovers can be brought back to life in an air fryer.

- 5 cups sliced fresh okra
- salt and pepper
- 4 slices bacon, chopped
Instructions

Preheat oven to 400 degrees and grease a baking sheet.

Place okra on baking sheet. Season with salt and pepper.

Scatter the bacon evenly on and around the okra. Use 2 baking sheets if you need to. You don't want the okra to be crowded or it will steam more than it will roast.

Bake for 25 to 30 minutes, stirring halfway through.
