Tahini Based Dressing
Tahini makes a great base for plant-based dressings. Made from ground sesame seeds, it adds creaminess. Tahini can be a little bitter, so a little maple syrup is added to the dressing to cut the bitterness. Honey or sugar substitute can be used instead.
There’s also orange juice for some acidity and more sweetness, tamari for saltiness, a little sesame oil for flavor and 1 garlic clove.
Crunchy Broccoli Salad
Cut the broccoli into small florets. Raw broccoli can be a little difficult to chew and swallow. It also gets coated in dressing better if it is in small pieces.
Variationson Broccoli Salad with Tahini Dressing
In addition to the broccoli, I like to add celery, red onion, carrots, and sunflower seeds, but these ingredients can be substituted out. Try using cauliflower, red bell pepper, diced apple, sliced grapes, or walnuts. Crumbled cooked bacon is also a great addition as is feta cheese.
Make Ahead Of Time
If you want to make this recipe ahead of time, make the dressing and the salad and keep them separate. Mix together just before serving. The dressing will stay good for about a week. Be sure to store it in the refrigerator.
Storage
Will keep for 3 to 4 days in an airtight container in the refrigerator, but the broccoli will lose its crunch over time.

Ingredients
- 1 head broccoli, cut into small florets
- 2 celery ribs, sliced
- 1/3 cup diced red onion
- 2 medium carrots, shredded
- 1/4 cup sunflower seeds
Tahini Dressing
- 5 tablespoons tahini
- 1/4 cup fresh orange juice
- 2 tablespoons tamari
- 1 tablespoon pure maple syrup
- 1 teaspoon sesame oil
- 1 garlic clove, finely minced
Instructions

Combine broccoli, celery, red onion, carrots and sunflower seeds in a large bowl.

In a medium bowl, whisk together all dressing ingredients.

Pour dressing over salad and toss to mix.
