July is National Watermelon Month and while plain watermelon is super delicious, this Mojito Watermelon is even more delicious and it just screams summer.
With all the flavor of of my favorite summer cocktail, there’s no better way to beat the summer heat. Mojito Watermelon is fabulously hydrating. With a high water content, plus minerals and natural sugars, watermelon is basically a natural sports drink.
Watermelon isn’t just a sugary treat. It has plenty of fiber and Vitamin A and C and B6.
Since Mojito Watermelon has rum, it is not kid-friendly, but you could easily omit the rum.
Mojito Watermelon
Mojito Watermelon is flavored with mint, lime, and rum. Makes a healthy summer snack!
Ingredients
- 1/2 watermelon
- 2 tablespoons lime juice
- 2 tablespoons rum
- 2 teaspoons sugar
- 1 teaspoon lime zest
- 1 tablespoon chopped fresh mint leaves
Instructions

Cut watermelon into wedges.

In a small bowl, stir together lime juice, rum, sugar, lime zest, and mint.

Pour over watermelon. Refrigerate for at least 1 hour before serving.
