Country Cabbage Soup is a wonderfully healthy way to enjoy cabbage. Lean ground beef is combined with cabbage, stewed tomatoes, onion and celery plus seasonings to make a filling low carb meal that is low in fat and calories.

Country Cabbage Soup with ground beef

Cabbage is one of my favorite vegetables and it is super low in calories. One cup of chopped cabbage has just 21 calories. Plus cabbage is a great source of Vitamin K, Vitamin B6, and Vitamin C.

I find cabbage has a delicious buttery taste when it is cooked down and it is the perfect complement to ground beef in this meaty soup.

Country Cabbage Soup is low carb and Paleo friendly

 

This is a low carb soup that gets plenty of protein from 2 pounds of lean ground beef. The protein will help keep you full between meals.

You want to cook Country Cabbage Soup for at least 30 to 40 minutes. The longer it simmers, the more flavor it develops.

This soup has only  127  calories per serving and it makes a delicious lunch or dinner. It is packed with nutrients and is good for Weight Watchers, Paleo, or Whole30.

Country Cabbage Soup

Ingredients

  • 2 pounds lean ground beef
  • 2 (28-ounce) cans stewed tomatoes undrained
  • 1 large sweet onion chopped
  • 1/2 cup chopped celery
  • 1 beef bouillon cube
  • 1 cup beef or chicken broth
  • 1/2 teaspoon black pepper
  • salt to taste
  • 1 medium head green cabbage shredded

Instructions

  1. Brown ground beef in a large Dutch oven.

    Drain off any grease.

  2. Add remaining ingredients and bring to a boil. Reduce heat to a simmer. Cover pot. Open and stir every few minutes until the cabbage wilts down. Cook for 30 to 40 minutes.

    Is this recipe correct?. Because it appears that there is more then a cup & a half of liquid in this dish

      It is correct. The cans of tomatoes give it some additional liquid. If you want more liquid, you can add an extra cup of broth.

    This soup is fantastic. I followed the recipe exactly and it came out great! It took a while for the cabbage to render its water but after about an hour it was perfect. Thanks for sharing. I will definitely be making again and again!
