Greek Orzo

Greek Orzo- this delightful side dish is flavored with fresh dill, feta cheese, cucumber, tomato, and olives tossed in a fresh lemon vinaigrette.

Ingredients

  • 1 cup dry orzo pasta
  • 1⅓ cups cherry or grape tomatoes, halved
  • 1 cup diced cucumber
  • ½ cup sliced kalamata olives
  • ½ cup crumbled feta cheese
  • cup diced red onion
  • 1 tablespoon chopped fresh dill

Dressing

  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons extra-virgin olive oil
  • salt and pepper

Instructions

  1. Cook orzo in salted water according to package directions. Drain.

    Transfer to a large bowl.

  2. Add tomatoes, cucumber, olives, feta cheese, red onion, amd dill to bowl with orzo.

  3. Place dressing ingredients in a mason jar and shake until combined. Pour dressing over orzo salad and stir to mix in.

    Note: If you dont have a Mason jar, whisk together in a bowl.

  4. Serve right away or chill for an hour first.
