Ingredients

  • 6 slices bacon
  • 1 cup diced onion
  • 4 to 5 jalapenos, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 3 1/2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 small head cauliflower, cut into small florets
  • 1 cup heavy cream
  • 8 ounces cream cheese, cut into cubes and softened
  • 2 cups shredded sharp cheddar cheese
  • 2 green onions, sliced

Instructions

  1. Cook bacon in a large Dutch oven until crispy. Remove bacon and set aside.

    Leave 2 tablespoons bacon grease in pot.

  2. Add onion and jalapenos to pot. Cook over medium heat for 4 to 5 minutes to soften.

  3. Add garlic and cook 30 seconds. Stir in flour. Cook and stir for 1 minute.

  4. Gradually whisk in chicken broth. Add salt, pepper, paprika, garlic powder, and onion powder. Bring mixture to a simmer.

  5. Add cauliflower. Cook for 10 minutes or until cauliflower is soft.

  6. Add heavy cream and cream cheese. Turn heat to low and whisk until cream cheese is completely mixed in.

  7. Whisk in cheese 1/2 cup at a time.

  8. Ladle into bowls. Crumble the bacon and sprinkle on top. Top with green onion.
