Ingredients

Meatball Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 3 tablespoons finely diced onion
  • 2 tablespoons cotija cheese
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon canola oil

Remaining Ingredients

  • 1 (10-ounce) can red enchilada sauce
  • 1/2 teaspoon ancho chili powder
  • 1/3 cup guacamole
  • 1 roma tomato, diced
  • 1 tablespoon cotija cheese
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Combine all meatball ingredients except oil in a medium bowl. Gently mix until evenly combined.

    Shape into 12 meatballs.

  2. Heat oil in a nonstick skillet over medium heat. Add meatballs and cook until browned on all sides.

  3. Add enchilada sauce and chili powder to skillet. Simmer until meatballs are cooked through and sauce is thickened some.

  4. To serve, top meatballs with guacamole, diced tomato, cotija cheese, and cilantro.
