Ingredients

  • 6 slices bacon chopped
  • 2 tablespoons butter or ghee
  • 1 medium onion chopped
  • 1 pound bulk Italian sausage
  • 1/2 teaspoon crushed red pepper flakes
  • sea salt and freshly ground black pepper
  • 4 garlic cloves minced
  • 6 cups chicken stock
  • 4 cups cauliflower florets
  • 1 cup heavy cream
  • 3 cups baby spinach

Instructions

  1. Cook the bacon in a Dutch oven until crispy. Remove with a slotted spoon and set aside. Leave bacon drippings in Dutch oven.

  2. Add butter and onion and saute for 3 minutes.

  3. Add sausage, red pepper flakes and a pinch of salt and pepper. Cook, breaking sausage apart with a wooden spoon, for 8 minutes. After 6 minutes, add garlic.

  4. Add chicken stock and bring to a boil.

  5. Add cauliflower and reduce heat to maintain a simmer. Simmer for 10 minutes.

  6. Add cream and simmer another 10 minutes

  7. Add spinach and cook 2 minutes to wilt the spinach. Taste for seasoning and add salt and pepper to taste.  Serve with crumbled bacon.
