  • 1 large egg
  • 1 cup natural peanut butter
  • 1/2 cup granular erythritol
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt


  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

  2. Place all ingredients in a large mixing bowl. Use a hand-held mixer to beat ingredients until they beocme a thick dough.

  3. Shape dough into 1 to 1 1/2-inch balls. You should get 14. Place on cookie sheet, spacing them apart as much as possible.

  4. Use a fork to flatten the balls and form a criss-cross pattern on top.

  5. Bake for 10 minutes or until firm and golden around edges but still soft in middle.

    Store in an airtight container at room temperature for up to 10 days.
