  • 2 cups chicken bone broth
  • 1 medium head of cauliflower
  • 1 tablespoon chopped chives
  • 1 garlic clove minced
  • 2 ounces cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • sea salt and freshly ground black pepper
  • unsalted butter
  • chopped chives


  1. Pour bone broth into a large saucepan.  There should only be about 1/2 and inch in the bottom of the saucepan. Use less than 2 cups if necessary.

  2. Chop cauliflower into bite-sized pieces. Bring broth to a boil and add cauliflower, chives, and garlic. Cover and cook 6 to 8 minutes, or until cauliflower is tender.

  3. Drain cauliflower well and pat dry with paper towels. Place in a food processor. Add cream cheese and cheddar cheese and process until cauliflower is completely smooth.

  4. Season to taste with salt and pepper. Serve with butter and chives.
