Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups mashed very ripe bananas
  • 2 teaspoons vanilla extract
  • 1/4 cup honey
  • 1 tablespoon coconut oil or olive oil
  • 1 large egg
  • 1/2 cup nonfat vanilla Greek yogurt
  • 1 tablespoon soy, almond, or coconut milk
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees and spray a 12-cup muffin tin with cooking spray.

  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.

  3. In a large bowl, whisk together mashed banana, vanilla extract, honey, oil, egg, Greek yogurt, and milk.

  4. Add dry ingredients to wet and stir just until blended.

  5. Fold in chocolate chips. 

  6. Divide batter evenly between muffin cups. Bake for 18 to 22 minutes.

  7. Cool for a few minutes and then remove muffins from pan.
