Jambalaya Skillet

Jambalaya Skillet is a low carb way to enjoy jambalaya. It's basically jambalaya minus the rice. So good and loaded with protein.

Ingredients

  • 12 ounces smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 celery rib, diced
  • 1/2 green bell pepper, diced
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 pound large shrimp, peeled and deveined
  • 1 1/2 teaspoons Cajun or Creole seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • sliced green onion or chopped fresh parsley for garnish

Instructions

  1. Cook smoked sausage in a large nonstick skillet over medium-high heat until browned. Remove with a slotted spoon and set aside.

    Leave the grease in the skillet and add olive oil and butter Place back over medium-high heat and add the celery, green pepper, and onion. Cook until softened, about 5 minutes.

  2. Add shrimp and all seasonings. Cook until shrimp turn opaque. Return sausage to skillet and check for seasoning. Add salt if needed.

    Sprinkle with sliced green onions or parsley and serve.

Recipe Notes

Add 1/4 teaspoon of cayenne pepper to make it spicy.
