Air Fryer Bacon Egg & Cheese Biscuit Bombs

Air Fryer Bacon, Egg & Cheese Biscuit Bombs- buttery biscuits are stuffed with scrambled eggs, bacon, cheddar cheese and air fried until golden. Makes a great breakfast on the go.

Ingredients

  • 6 slices bacon, chopped
  • 1 tablespoon butter
  • 5 large eggs
  • 1 (8-count) tube refrigerated biscuits, homestyle or flaky layers
  • 1 cup shredded sharp cheddar cheese
  • 1 large egg, beaten with a little water

Instructions

  1. Cook bacon in a nonstick skillet until crispy. Remove with a slotted spoon and place on a plate lined with paper towels.

  2. Drain bacon grease out of pan. (Can be used for another use.) Wipe skillet clean.

    Beat the eggs with a little salt.

  3. Add butter to the skillet and place over medium heat. When hot, add eggs. Cook eggs until just set. You want them a little undercooked since they will cook more in the air fryer.

  4. Pull each biscuit into 2 layers, leaving it attached on one side. Place a mound of eggs, cheese and bacon on each one.

    Seal the edges completely.

  5. Brush the tops of the biscuits with egg wash.

  6. Place a parchment paper liner in the air fryer basket. Air fry 4 biscuit bombs at a time.

    Air fry at 325 degrees for 8 minutes, Flip them over and air fry another 3 to 5 minutes or until biscuits are totally cooked.

    Repeat with second batch.

  7. Optional: When done, sprinkle a little more shredded cheddar on top of each one and air fry about 30 seconds to melt the cheese. Sprinkle any leftover bacon on top.
