Keto Sausage, Egg, and Cheese Pinwheels- breakfast sausage, scrambled eggs, and cheddar cheese are rolled up in a low carb dough, cut into spirals and baked until golden. Such a delicious keto breakfast.
Preheat oven to 375 degrees and grease a 7x11-inch baking dish.
In a small bowl, whisk together almond flour, coconut flour, garlic powder and onion powder. Set aside.
In a large microwave-safe bowl, combine mozzarella cheese, butter and cream cheese.
Microwave for 1 minute 30 seconds. Stir together. If it is still stringy and not melted, microwave another 20 to 30 seconds.
Stir in the dry ingredients and then the egg. Wet your hands and use them to make sure the dough is mixed really well.
Place the dough on a piece of parchment paper and use your fingers to press and shape it into a 13x9-inch rectangle.
Sprinkle the cheddar over the dough.
Chop the egg into pieces and evenly scatter them over the dough.
Layer the sausage over the cheese and eggs.
Starting at a long side, roll the dough up.
Use a sharp serrated knife to cut it into 12 pieces.
Place the roll-ups cut side down in the greased baking dish.
Bake for 20 to 25 minutes.
Place them close together in the pan or they will spread out as they cook.
Leftovers can be stored in the refrigerator for 4 to 5 days.
